  2. More catching up

    Yesterday was oatmeal for breakfast. And lunch was pasta with sauce poached eggs.

    Souse for dinner. It’s my sentimentality that had me make souse (on a week, night no less). Boiled pig ears, cucumber, onion, lime with bread for sopping.

    The grocery trip that got me cucumber and onion, also yielded Anna’s ginger thins, some kind of fancy rice cracker, and a cheap bottle of Zinfandel. I spent $40 and still have nothing to cook.

    That’s not wholly true, I have soup made from the broth this produced. That’s gonna be so delish tonight. No idea what to make for the potluck on Friday. And I have to set about cooking what I have.

    I defrosted and washed some pig ears then put it in the crockpot over night, salt, peppercorns, hot pepper, and water. Got it hot then turned it to low. It’s been simmering all day too. I just couldn’t think of whether to put it in the fridge or turn it to ‘warm’ so I just put the pepper back in and left it.
It’ll be hot for sure.
I need to get my souse fixings, and then the broth will be the base for soup.
No idea what I’m going to do with my chicken wings. Plus I have the remaining veg to get through. Gah. Dishes. Pots. Thanksgiving. Cravings. Candy in the desk drawer. Sentence fragments.

  4. Catching up

    Monday’s dinner was made out of the veg basket. The tiny Japanese eggplants sauteed with ginger, garlic, slivers of bok choy, and scallops.

    Tuesday’s breakfast was oatmeal. I cooked up a batch on Monday and portioned them out. That’s worked out well. I’m also interested in learning how it works in a crock pot. Damn I want that 3-pot crock pot!!!

    This is Tuesday’s lunch. Cause I’m way off my game, I didn’t have anything with me, but I had put aside some whole wheat pasta and sauce here. I cracked an egg to poach in the sauce to get in a little extra protein. Then I covered all that in pseudo-Parmesan cheese.

    I had the choice of asking someone for a ride or walking home 45 min. I used that time to talk to mom. Nice. With every dish in the sink it’s hard to imagine what I’ll be able to cobble together for dinner. I got hooked on the idea of breaking out the aforementioned crockpot but it’s too slow to make soup and ideas of what I could make swirled like crap in the loo.

    Eventually I roasted a little eggplant and mashed it with roasted garlic. I pan fried some tofu. And, cooked a piece of fish. Serviceable, but not good. The fish is some of what I got in the summer, cut and froze. It was iffy then, but I’m making it make do.

    I also took out some wings to defrost and put some pig ears in the crock pot to make souse. Pics to follow.

    Today’s breakfast—

    & even though I’ve been starving since 10:30, at 2 writing this now, I still haven’t eaten. I guess I could cobble together something similar to yesterday’s lunch, different pasta option.

    One of the best parts of the CES tables are the leftovers. We cooked the Vietnam table and I spent the weekend eating pho (not as good as mine), ground pork, mango salad, and chicken salad. So this is the last of it, well, the very last was consumed as my 4 o’clock munchy.
I also ate a mini Twix and Butterfinger bar. But those are gone now. They can’t hurt me anymore.

  6. The Lost Week—Week 2

    Week two of not giving a damn. It’s baaaacccckkk! Busy, stranded, flummoxed. Stress is a factor I create. Obviously there are outside stressors, but I know I create others myself.

    Dishes and laundry piles. Hiding on the couch in front of the computer watching ‘one more’ mystery or whatever. Anyway, I’m back to looking at the leaves and would like to turn a couple of them over.

    I rode+walked to work today. I’ll be walking home. Luckily the weather is nice. I’ve actually promised to meet a friend to run tonight. She’s just canceled. Now it’s for me to do it myself. After walking home I usually feel, ‘yeah, that’s enough of that.’

    Breakfast was 2 fried eggs, followed by popcorn at 11. It’s 12:30 and I’m starved.

    This is the bounty of a local farm and my dinner for the week (except for the radishes which are a gift).

     
  7. The Lost Week

    I blame the gigantic pot of butternut squash soup. After 4 days of it, feeling more and more like eating baby food, I couldn’t take it any more. Plus, even though I had stuff in the fridge, it was looking less coherent come meal time.

    My eating wasn’t good last week, but it wasn’t horrible. I had salad and pizza, vegetables and cookies, I survived Halloween and cooked Pho again. Foods not really the problem. I’ve been less than active too.

    This week sees another iffy food week but I’m also going to run with the gang. They finished the marathon, and I’ve done fuckall. Steph used a ‘yes’ to get me to rejoin the runners this evening. I hope it’s not like starting over.

    Man, I may have to give up the rides to work. Walking actually feels better. I don’t get it. I changed the alarm time from 6 to 6:30, cutting out the half hour of alarm slapping. And, despite the cold and rainy conditions, I got out and hit it. I wanted to check out the campus bus, which meant waiting 5-10 min for it to come, then finding that it was still gonna drop me past where I needed to go, so I ended up walking back. Time wise, it wasn’t worth it.

    Glad I had that extra oatmeal ready. I’m gonna start packing up a bunch of portions of the cooked oatmeal in advance.

    10:30 Yogurt.

    And I’ve been drinking this weird licorice tea that has my mouth tasting sweet all morning, even though I didn’t add any sugar.

With a sink of dirty dishes, no counter space to chop and dice, dwindling supplies, and an instance of abject apathy, dinner consisted of whole wheat pasta with sauce under powdered Parmesan and black pepper. Quick and dirty.
Later I had an apple I found in my drawer, dipped in a bit of tamarind and Srirach.

    In this instance, popcorn is a vegetable.
